Lacy’s Fresh Fare and Catering update

We are happy to say that Lacy’s, our student run commercial food service lab that opened in February, has been a success.

Over the semester, the seventeen students enrolled rotated through several positions including operations manager, prep, line cook, service, bakery, sanitation, and recipe and development. During this time, they gained valuable hands on experience pertaining to food quality, service standards, equipment training and an operational facilities overview of how food service operations works. The students prepared daily specials consisting of Buffalo Chicken Wraps, BBQ Beef Sandwiches, Eggplant Fries, and a Grilled Cuban Sandwich among others.

They also worked on numerous catering events from coffee bars, to “evenings of gratitude”, to retirement ceremonies, to lunch buffets, to preparing over 600 beirocks from scratch for our Open House lunch. Overall, the students gained valuable hands on and managerial experiences during this lab. We look forward to many visits and catering opportunities to Lacy’s in the future!
