With limited foot traffic in Justin Hall during lunch service, instructor Erica Bauer initiated a few new initiatives this fall to help provide learning experiences for students in the Lacy’s food production Lab. One is a new weekly meal replacement program called Lacy’s at Home, which has grown in popularity with a steady increase in sales from its inception. The students prepare Kansas homestyle favorites, such as Shepherd’s Pie, Bierocks, and Tamales, for customer to purchase to take-home, reheat, and serve.
Each family entrée will serve four to six, while the student version serves two. The meals are made with fresh products and produced for a reasonable price. The initial idea was to serve the faculty and staff of the Manhattan campus, but due to popularity it increased to the student population this spring.
Another initiate that started in the fall of 2020 was providing meals for the Konza Student Table, an intuitive started by St. Isidore’s Catholic Student Center to provide meals in need to any student in the K-State community who needs one. Each Wednesday evening, students from across campus line up to receive a free meal. Meals are provided to St. Isidore’s at cost to keep the program viable. Since the start of the program in mid-September, almost 8,000 meals have been prepared and served to hungry Wildcats.
